This wine is a blend of two Bordeaux white varietals: Muscadelle 70%, and Sauvignon Blanc 30%.
I love making blends because it allows me to focus solely on the taste and not the labeling rules. Muscadelle is a very interesting variety, in that it is has a steeliness that can be hard to soften. But instead of taming it, I found that Sauvignon Blanc can complement it, adding dimension to its aromas and flavors. Then I leave it just a tiny bit sweet to balance its brightness with a pleasant surprise.
A sunny, off-dry wine with a complex bouquet of green apple, pear, grapefruit and pineapple. Refreshing flavors of lemon-lime, gooseberry and green apple, with a medium body and crisp, bright finish.

Both the Muscadelle and the Sauvignon Blanc were fermented in stainless steel. After blending, the wine was cellared in stainless for four months before bottling.
