The bright hue of this 100% Cabernet Sauvignon Rosé was achieved using both the saignée method, which involves bleeding off a little of the free-run juice, as well as pressing some fresh must, with less than a day of cold-soaking with the skins.

    The bright hue of this 100% Cabernet Sauvignon Rosé was achieved using both the saignée method, which involves bleeding off a little of the free-run juice, as well as pressing some fresh must, with less than a day of cold-soaking with the skins. The juice was then slowly fermented in small stainless steel barrels at ambient temperatures. The grapes are from a 36-year-old vineyard block and were picked by hand at the coldest part of the early morning (3am!).
